Ensalada de Bacalo (Salted Cod Fish Salad)

I love bacalo or salted cod fish!  We were supposed to make bacaliatos for Miguel's 1st birthday party but it didn't happen.  We had more then enough food as it was so it was ok.  I had to come up with a way to use up the fish though.  I remembered this salad that my Titi Maddy made when she came to visit several years ago!  Here is MY twist on it.  I forgot to take a picture but it was happily gobbled up by not just my kids but their Rican grandparents as well with HIGH praises!  Looks like this one will stay on the recipe rotation for sure.

INGREDIENTS:

1 pound bacalo
4-6 medium potatoes, peeled
1 medium RED onion minced
4-6 hard boiled eggs
fresh cracked black pepper
3/4 cup EVOO
1/2 cup vinegar
juice of 1 whole lemon

optional ingredients:

diced tomato
diced avocado

I started by soaking the cod in water for 4 hours changing the cold water 2 times.  Change the water again and boil for 10-15 minutes. DO NOT OVER COOK, IT WILL GET LIKE RUBBER!!

In a separate pot I set to cook the potatoes and when they start boiling add the eggs and cook until potatoes are soft.  Remove from heat when done.  Cool eggs and then peel and slice them then add to the bowl. Cube your potatoes and add them to the bowl.  You will want to season at this point with the pepper.

Shred the cod and make sure it doesn't have any bones and then add to the above mixture.  (this is also where you would add the avocado and tomato if using).  Also add onion.

Make your dressing and MIX WELL.  Pour over salad and mix to coat.  CHECK SEASONINGS.  Add more as needed.

Serve immediately and enjoy!!!
