now THIS is a salad!

I. LOVE. SALAD.  End of story.  I don't think there's EVER been a salad that I've met and NOT liked!  I grew up eating lettuce in our house - iceberg.  As I have grown though I have evolved in eating MANY different types of lettuce and toppings on my salad. 

My ULTIMATE FAVORITE though is a GREEK salad!  Growing up in Detroit that right there was the mecca for ethnic foods and one of them of course being Greektown!  What I love most about the Greek Salad is how different each and every restaurant or family makes theirs. 

This is my creation today:

MY ingredients:

Feta crumbles
Lettuce Trio (romaine, iceberg and something else i forgot)
garbanzo beans
beets
diced grilled chicken
and GREEK dressing

other add ins can include:  tomato, cucumber, kalamata olives (none on hand today :-( ), pepperonchinis or pretty much whatever your heart desires.
