recipe: meatloaf/meatballs

maybe i'm the only one but I use the same recipe for both loaf and balls.  they always turn out SO moist and not like my mama's meatloaf!  this is quite the crowd pleaser even for my little picky group!  and i'm going to share with you!

2 pounds hamburger (or turkey or pork, whatever you like.  i use 1 pound 85% and the other 95%)
shredded or finely diced veggies (carrots, celery, onion, multi colored peppers, zucchini, etc)
finely diced green olives in a little olive juice
1/2 cup spinach finely cut (when i have it)
minced garlic
bread crumbs
1 egg
4 ounce can tomato sauce (divided)
few shakes of worchestershire sauce
seasonings of choice (i used sazon, adobo, and a little pepper)

i mix all together using enough bread crumbs so it sticks.  i add maybe 1/4 can of the tomato sauce.  for balls i use a little more crumbs so they stick a little better. 

balls i either put in pasta sauce or in the crockpot.  loaves i either make a giant one (and include a surprise of hard boiled egg (YUMMY!)) OR i do mini's.  either way big loaf or mini's i cover with bacon and pour remaining sauce over it and then cook.

i have also tried subbing the tomato sauce for cream of soups....
