I will say, for the most part, my kids are NOT picky eaters! I do still take to getting as much veggie into them as I can, any way I can! I LOVE to add wizzed up chick peas (garbanzo beans) in when making mac & cheese. To my spaghetti sauce I finely chop carrots, celery, peppers (pretty much whatever is on hand) BUT for mushrooms I wizz them in my chopper to get them as fine as I can.
Here is what I do for Macaroni & Cheese Surprise
1 box mac & cheese (prepared as directed)
1/2 can chick peas pureed
2-3 teaspoons cream of mushroom soup
1 can tuna fish packed in water, drained
combine all. I will also sometimes add peas to it whole and they will eat them.
I didn't need a cookbook to tell me to hide the veggies for my kids to eat them, but i DO like their dessert options!
We used to eat mac & cheese, tuna and peas all the time when I was a kid! I have a bag of pinto beans - maybe sometime you could share a few recipes with them? I have no clue what to do with them!
